Description

Gaoshan tea is grown in the alpine tea zones of Taiwan. It is grown at altitudes  higher than 1000-1500 meters above sea level, where the air is clear. Taiwan’s unique island geography with high mountain ranges at its centre, where there’s high humidity and natural precipitation, makes it a most suitable environment for growing tea.

Imperial Oolong is one of the most popular teas in China and Taiwan. The leaves are withered, rolled or cut, and then semi fermented. It is then fired to stop the enzyme oxidation.

Imperial Oolong is a category of green tea that is slightly stronger in taste than Japanese Green Tea, but more delicate than the fully fermented black tea. It can complement any kind of food, but goes particularly well with oily food, and is often appreciated as an after meal tea. It is one of the most enjoyable and exquisite green teas, and can be served as a hot or cold beverage in all seasons.

How to Brew

  1. Place Imperial Oolong tea leaves into a pot (1 teaspoon for 1 cup).
  2. Pour boiling water into the pot until the leaves are covered and pour it out immediately. (This step refers to as ‘awakening and cleaning the leaves’).
  3. Pour boiling water into the pot and infuse for 2 mins then pour all of the tea into the cup.

A second and third infusion is possible with the same tea leaves.
